Having always been a devoted fan of Spanakopita, I find myself ordering it without fail at Greek restaurants and even taking an extra slice to go. After mastering my own homemade Spanakopita recipe, which proved just as flavorful and remarkably easy to prepare, I've been making it regularly ever since. Inspired by its success, I introduced the Spanakopita Quesadilla recipe, a hit among my readers. And now, I'm excited to share these delightful Easy Spanakopita Bites.
Ingredients
- 1 packet of Athens Mini Fillo Shells
- Approximately 9 cups of finely chopped baby spinach
- 2 tablespoons of butter
- 1 tablespoon of olive oil
- Half of a medium onion, finely minced
- 2 cloves of garlic, finely minced
- Salt and pepper to taste
Egg Mixture
- Two eggs
- Half a cup of crumbled feta cheese
- One-third cup of grated Parmesan cheese
- One-quarter cup of chopped dill
Step-by-Step Instructions
Step 1: Cook the onion in olive oil and butter over medium heat, stirring occasionally, for approximately 3-4 minutes.
Step 2: Afterward, add the garlic and spinach to the skillet and continue to sauté for another 5 minutes or until all the liquid has evaporated. Season with salt and pepper to taste.
Step 3: Next, transfer the cooked spinach onto a plate and allow it to cool in a refrigerator for a few minutes. While the spinach is cooling, prepare the egg mixture by whisking together the remaining ingredients.
Step 4: Then, add the cooled spinach to the egg mixture and stir until well combined.
Step 5: Evenly distribute the filling among the 15 Fillo shells. Bake at 350°F for 15 minutes. Allow to cool slightly before serving.
